OBJECTIVE: Alphabetum presentation: codified method that allows the ice cream maker to creatively develop an interesting offer, a tool that allows to delve into the essence of flavoring and complementary ingredients used in ice cream making. Sensory analysis: focus on methods of combining ingredients. Creation of compound and layered ice creams: in-depth study of all stages of creation, from the idea of the combination to the decoration, with the aim of drawing a guideline that can then be customized and developed by the gelato maker.
